Sun, 3 February 2008 Kristina and I made a wonderful meatloaf for dinner tonight--so good that we wanted to share the recipe with you. It's based on this recipe from the Food Network, but we added the mushrooms and beer. Salad oil 1 carrot 2 stalks celery 1 medium onion 1/2 pound mushrooms 2 pounds ground beef 2 eggs Salt and freshly ground black pepper Dash Tabasco Dash Worcestershire sauce 3 slices bread Beer 1/2 cup seasoned bread crumbs Ketchup Preheat oven to 375 degrees F. Dice carrot, celery, onion and mushrooms. A food processor is ideal, but you can do it by hand if you're more patient than we are. Saute the veggies in a saucepan with a couple of dribbles of salad oil. Set aside to cool, then drain the excess juice. Meanwhile, soak the three pieces of bread in beer. In a large bowl, put the veggie mixture, ground beef, eggs, salt, pepper, Tabasco, and Worcestershire sauce. Squeeze the beer out of the bread (like a sponge) and tear the bread into pieces into the veggie and beef mixture. Add the bread crumbs and mix thoroughly. Roll the mixture into a firm loaf and place in a loaf pan. Spread ketchup over the top. Bake in preheated oven for 45 to 55 minutes. Take out and let sit for a few minutes before serving. Enjoy! As you
know, during the June retreat and the planning process we identified the
critical importance of a webmaster for our Law School. Following a
search and after extensive consultations and the recommendation of the
leadership of the Technology and Communication Committee, I am pleased to announce that Kristina Lively has been offered
and accepted the position of Law School webmaster. Kristina most recently served as the Senior Electronics Resource Librarian/Web Project Coordinator at the National Endowment for Democracy in Washington, D.C. She has also served as the webmaster for the U.S. Committee for Human Rights in North Korea and as a web consultant to the Health Association Libraries Section of the Medical Library Association. Kristina has an M.L.S. from The Catholic University of America and a B.A. in music from Mercer University. She also received Webmaster Certification in 2006. Kristina's first day at the Law School will be Monday, February 4th. She will be working from the judge's chamber of the Letro Courtroom until a permanent office can be identified; please stop in to introduce yourself and welcome her to O'Brian.
